Chickpea & Beet Veggie Burger

Veggie Burger

Add some variety to your grilling menu with these healthy veggie burgers featuring beets, chickpeas, quinoa and hemp!

Serving Information

Makes 8-10 patties


§3 small Beets, roasted, skin removed
§2 cans chickpeas, rinsed
§Juice from 1 lemon
§2 cloves garlic, minced
§½ tsp cumin
§1 T tahini
§½ cup parsley, roughly chopped
§1 ½ cups cooked Quinoa
§¼ cup Hemp seeds
§½ cup sunflower seeds
§1 Egg
§Salt and pepper to taste
§Toppings of your choice


1.Preheat oven to 375 degrees and line a baking sheet with parchment paper.
2.Rinse beets and pat dry. Place on baking sheet and bake for about 30 minutes or until beets are tender.
3.While beets are roasting, cook quinoa according to package instructions and set aside.
4.Remove beets from oven. Once cool, peel skin and set aside.
5.Place beets, chickpeas, lemon, garlic, cumin and tahini in food processor and pulse until well combined.
6.Fold in remaining ingredients until well combined.
7.Form into patties.
8.Heat skillet coated with olive oil over medium heat. Add patties and cook about 5 minutes per side.
9.Serve on whole grain buns with sliced avocado and bibb lettuce, or whatever else you enjoy!
