Mediterranean Tuna Salad Lettuce Wrap

Using lettuce as a wrap is a great, fresh, gluten-free alternative to bread! -Genevieve

Serving Information


2 cans solid white albacore tuna in water, drained
1 15oz can chick peas, drained and rinsed
½ cup red onion, chopped
2 stalks celery, diced
¼ cup sundried tomatoes, chopped
¼ cup Kalamata olives, chopped
½ cup parsley, roughly chopped
2 T red wine vinegar 
2 T olive oil
1 T lemon
1 tsp Dijon mustard
Fresh ground black pepper, to taste
Bibb lettuce leaves for the “wrap”


  1. In a large bowl, combine tuna, chick peas, onion, celery, sundried tomatoes, olives, and parsley.
  2. In a separate bowl, whisk together red wine vinegar, olive oil, lemon, and Dijon mustard until well combined.
  3. Toss vinaigrette into tuna mixture and season with fresh pepper to taste.
  4. Spoon tuna mix into Bibb lettuce, fold over, and enjoy!
