This chia pudding is super fast to prep in the evenings for a nutritious on-the-go breakfast. Using watermelon as the base makes for a refreshing treat in the summer heat while chia seeds are packed with omega-3’s and fiber to start your day off right!

Makes 2 servings
Ingredients
- 1 cup watermelon, seedless
- ¼ cup chia seeds
- 2 T lime juice (about 1 lime)

Zest from half a lime
- 2 kiwis, diced
Directions
- Blend watermelon and lime juice in blender until smooth.
- Fold in chia seeds, lime zest, and kiwi until combined.
- Place in covered container and place in fridge.
- Allow to sit overnight and wake up to a delicious breakfast!
